Tiramisu

Moja ukochana bratowa gotuje tak wspaniale, że to powinno być karalne. Za jakikolwiek przepis się nie weźmie, zawsze wychodzi jej wyśmienicie! Co do samego tiramisu, deser ten chyba nie wymaga żadnego wstępu celem zaprezentowania go od jak najlepszej strony, ponieważ posiada same najlepsze strony: jest łatwe w przygotowaniu, smakuje wyśmienicie i zachwyca wszystkich, którym się rzuci nim w twarz.

As for the dessert itself, I don’t think it needs an introduction to show its best side as it has only best sides: it’s easy to prepare, tastes delicious, and whoever rubs their face all over it is delighted.

Składniki na 4 porcje. Ingredients for 4 servings.

  • 250 g zimnego serka mascarpone
    250 g cold mascarpone cheese
  • 150 ml świeżone parzonej kawy espresso
    150 ml brewed espresso
  • 100 g biszkoptów
    100 g sponge biscuits/fingers
  • 60 ml likieru Amaretto
    60 ml Amaretto liqueur
  • 4 żółtka o temp. pokojowej
    4 egg yolks at room temperature
  • 4 łyżki cukru pudru
    4 tablespoons caster sugar
  • gorzkie kakao
    unsweetened cocao powder

Sekretem w dobrze utartym kremie z jednej strony jest długie ubijanie żółtek, z drugiej temperatura serka, a z trzeciej krótki czas łączenia składników, żeby krem się nie zwarzył. Mówię z własnego doświadczenia, bowiem nie raz, nie dwa tak mi się właśnie w misce podziało… Moja bratowa nie ma jednak dwóch lewych rąk, więc oczywiste było, że jej krem wyjdzie idealnie. Czytałem też w różnych przepisach, że likier Amaretto można zastąpić likierem Cointreau bądź też innym, który nam smakuje. Ja sam likieru migdałowego nie lubię, ale w tiramisu smakuje wybornie. Domyślać się mogę, że z Cointreau inaczej być nie może. Wiecie, pomarańcze, czekolada… W wersji ugrzecznionej likier w ogóle można sobie też darować, o.

Speaking from experience, what makes the perfect creamy mixture is beating the egg yolks long, keeping the mascarpone cheese cold, and not overmixing the mixture, otherwise it will separate. I’ve been there not once, not twice. My sister-in-law’s not all fingers and thumbs, though, so it was pretty obvious hers was going to be just perfect. I’ve also read in recipes that you can actually use Cointreau or other liqueur instead of Amaretto. I don’t really like Amaretto, but the tiramisu was amazing, which, I believe, would also be the case with Cointreau. I mean, oranges and chocolate? Oh, and the recipe can be made teetotaller-friendly if you don’t use any liqueur at all.

Przygotowanie. Preparation.

  1. Kawę mieszamy z likierem, a jeśli likieru nie dajemy, kawę zostawiamy w spokoju. To chyba oczywiste?
    Combine the coffee and the liqueur, but if you’re not using any liqueur, leave the coffee alone. Isn’t it obvious?
  2. Żółtka z cukrem wlewamy do metalowej miski i ubijamy mikserem na wysokich obrotach na puszystą i jasną masę około 8 minut. Nie wiem, czemu miska powinna być metalowa, ale pewnie działa tu jakaś kulinarna magia, o której nie mam pojęcia.
    Beat the egg yolks and the sugar in a metal bowl for 8 minutes at high speed until light and fluffy. I’ve got no idea why the bowl should be metal; my guess is that there’s some culinary mumbo-jumbo behind it, but I wouldn’t know.
  3. Serek ubijamy na średnich obrotach 2-3 minuty.
    Beat the cheese at medium speed for 2 or 3 minutes.
  4. Żółtka łączymy z serem i krótko oraz delikatnie miksujemy na gładką masę. Jeśli krem się zwarzy, trzeba będzie zacząć od początku, więc kluczowe są tu słowa “krótko” i “delikatnie”.
    Fold the egg yolks gently into the cheese, beating lightly until smooth. If the mixture separates, you’ll have to start over again, so the words “gently” and “lightly” are crucial here.
  5. Biszkopty maczamy sekundę czy dwie w kawie, żeby nam nie rozmiękły, a następnie w naczyniu: kładziemy biszkopt, sypiemy kakaem, wykładamy połową kremu i powtarzamy: jeszcze raz biszkopt, kakao i krem.
    Dip the sponge biscuits in the coffee for a second or two just until soaked, but not soggy. Layer these into your dish, and then dust with the cocoa powder, spread over half of the cream, and repeat: sponge biscuits, cocoa powder, cream.
  6. Deser schładzamy w lodówce kilka godzin lub całą noc, a przed podaniem można jeszcze posypać kakaem.
    Chill for a few hours or overnight. When ready to serve, dust with some extra cocoa powder.
